The cake needs a dry place and room temperature (even if it is closed). For this reason, it will always be better to find a corner in your kitchen, leave it in the pantry or in a cupboard rather than in the fridge.

Airtight container
One of the best options to preserve a homemade cake is to put it in a pan. These plastic or glass containers allow us to preserve food – especially already prepared food – without it drying out or losing its corresponding properties.
However, not everyone has a lunch box at home, but that’s okay! A Tupperware or an airtight container also works. The most appropriate thing is to try to find one that fits as much as possible to the specific size of the cake and that closes very well. In this way, we will ensure that its freshness and texture are maintained for several days.
Transparent paper
One of the lifelong tricks is to use transparent plastic wrap to preserve your cake. You must wrap it well, without leaving holes through which air can enter. Also, you can include a last layer of silver foil.
Hermetic bag
Instead of transparent paper, another option to store a homemade cake and that it does not get hard is to opt for an airtight bag -of the frozen ones-. If you opt for this alternative, you should pay special attention to two aspects: firstly, that it is closed very well (with no open side left) and, secondly, that there is no air left inside the bag. To avoid the latter, squeeze the areas without cake to expel it and make sure that the bag is not swollen when you close it.
Freeze it
It is not the best option because it loses some of its properties, but if you want to keep it for a longer time, you can put the cake in the freezer. Take it out half a day before you want to eat it and, if you see fit, give it a little heat before eating it. Ready!

Ingredients:
+3 eggs
+1 lemon yogurt
+1 measure of olive oil
+2 measures of white sugar or 3 of brown sugar
+3 measures of common wheat flour
+1 envelope of chemical yeast
+1 lemon zest
+1 pinch of salt
* One measure = 1 glass of yogurt (you can use the lemon yogurt glass when you empty it)
Step-by-step preparation:
- Mix the eggs, sugar, oil, yogurt and lemon zest in a bowl. Stir it all up very well.
- Add the sifted flour to the mixture, passing it through a strainer.
- Stir and add the yeast and a pinch of salt.
- Mix everything very well with a rod.
- Grease a mold with butter and add a little flour so that the cake does not stick when baked. After this, pour the cake dough into the mold.
- Place it in the oven at 180º for 40 minutes with the fan on. When you see that it is golden and well done, take it out!
