Prepare a sauce with the well-chopped vegetables, that is, the peppers, the carrots, the onion and the mushrooms. In a buttered dish, place the salmon fillets seasoned with a pastille of avecrem de pescado. Add a pinch of salt and cover the fillets with the poached vegetables. Wash it all down with the glass of white wine and the fish broth.
Cover the dish and put it in the microwave for 5 or 6 minutes at maximum power.
Let rest for 2 or 3 minutes and serve with the vegetables. You can also serve it with some roasted or steamed potatoes
The rawer the salmon is, the juicier it will be. The key is to find the middle ground.
